What is Cream Cheese?

My first foray into consuming cream cheese didn’t happen until I moved to Australia in my teen years. I have to admit that I was rather confused as to what it was. Was it a cream? Was it cheese? How could it be both when I could spread it on crackers and bread so easily?

Cream cheese, by definition, is actually cheese. It is made with cow’s milk and cream.

It is considered cheese because the FDA (US Food and Drug Administration) defines a cheese as having 33% fat with a moisture content of 55% or less.

We care about how the FDA defines it as the cream cheese we know today was created in the 19th century in New York State by dairyman William A. Lawrence.

How is Cream Cheese Made?

To make cream cheese, fresh pasteurised cream or a combination of cream and milk are mixed in with lactic acid bacteria, which causes the pH to lower.

When this happens, it starts to coagulate and curd forms. The whey is drained, and the curd is then heated, which allows it to stay fresh.

Stabilisers are added and voila! Cream cheese is formed!

What does Cream Cheese Taste Like?

Cream cheese is mild, sweet and has a slight tang. It is smooth and very spreadable.

What Does It Mean To Whip a Dressing?

For me, the idea of whipping ingredients creates a creamy, fluffy texture. Of course, having a dairy component allows for this to happen. Still, you do also need ingredients to dilute an otherwise overly heavy cheese.

You can also whip avocado, which will give you a vegan and non-dairy alternative. Avocado, by its nature, is naturally so smooth, so it makes for the perfect ingredient.

Ingredients

These are the ingredients you need for whipped feta dressing:

Feta cheese: You want to get good quality Greek feta cheeks. We’re looking for the saltiness of the cheese to flavour the recipe while it has to be able to crumble easily and whipped through with the rest of the ingredients.

Cream cheese: Cream cheese is a soft, usually mild-tasting fresh cheese made from milk and cream. Fill cream is best to be able to achieve that ultra-creamy finish.

Milk: Full cream milk to help dilute the recipe and allow the ingredients to be whipped into shape without getting too gluggy.

Oregano: Use fresh oregano to give the dressing a peppery finish with slight bitter notes. For such small leaves, they sure are nice and bold!

Lemon: The acidity will help cut through the richness of all that dairy.

Salt and pepper: To taste.

Instructions

Add the feta cheese, cream cheese, milk, 2 tbsp of oregano leaves, juice of ½ lemon and salt and pepper to taste in a hand blender.

Blitz until well combined and smooth in texture.
