Oranges naturally gravitate towards other citrus fruits like grapefruit and lemons but also work well with nutty flavours like almonds, walnuts and hazelnuts.

I love using oranges with fennel and slightly more piquant vegetables like arugula, endive and radicchio. The sweet flavours of oranges help soften the bitterness of these vegetables.

  • Orange juice: Stick to the regular varieties such as the Valencia or Navel oranges. They are usually sweet and have plenty of juice.
  • Salt & pepper: Just a pinch of both will suffice.

Apple cider vinegar alternatives: Most vinegars will work with this dressing including white vinegar, champagne vinegar or white wine vinegar. 

Maple syrup substitute: if you don’t require a vegan salad dressing, you can substitute maple syrup with honey.

Additional ingredients: You can treat this orange salad dressing as a base and build on it with other ingredients to make it your own. Try finely chopped shallots, parsley or Dijon mustard to boost the flavours.
