As a salad eater, I have no doubt you would have had many mustard based salad dressings. Dijon mustard is a staple in our household. This smooth mustard has the perfect level of pungency and flavours to give any salad a bit of a lift.

Have you ever wondered why it’s called Dijon mustard? Dijon mustard originates from the city of Dijon in France. Dijon is the capital of the Burgundy region which is France’s prolific wine region.

To provide additional nutrients to the wines, mustard is grown underneath it to supplement the grapes.

Dijon is made from brown mustard seeds and white wine. It has a pale yellow colour, unlike those bright yellow mustards you’d find in America.

The city of Dijon has been known as the mustard making capital of the world and has been producing them since the 1200s. In the 1700s, it was granted exclusive rights in France to make the mustard, much like Champagne and Parmigiano-Reggiano.

For this salad recipe, I have added the contrasting flavours of sweet honey and tart lime. This is a wonderful combination of so many flavours in the one recipe and is a really versatile dressing for a whole host of salad combinations.

Ingredients

These are the ingredients you need for Dijon mustard lime dressing:

Dijon mustard: If you’re able to, grab yourself some Grey Poupon Dijon mustard. The first batch of mustard was made back in the 1860’s in Dijon, France and was instantly a winning formula.

The Maille brand is also great and a much easier Dijon mustard to find.

Olive oil: Mix some good olive oil with the ingredients to provide for a delicious salad dressing.

Lime: Add some lime juice to give the recipe the tartness it requires.

Honey: Stir through some sticky honey for some sweetness. The combination of these flavours are delicious! For a vegan version you can substitute with organic rice malt syrup or maple syrup.

Salt and pepper: Just some salt and pepper to taste.

Place olive oil, Dijon mustard, lime juice, honey, salt and pepper in a jar and give it a good shake.

If you’re making it in advance, make sure to give it another good shake before you add it to the salad for an even spread of flavours.
