Horseradish cream is a condiment made from grated horseradish root blended with cream or sour cream, vinegar, and sometimes other seasonings. It has a pungent and spicy flavour that is milder and creamier than plain horseradish. 

Horseradish cream is often used as a sauce or spread to accompany meats, sandwiches, and other dishes, adding a zesty kick to the flavour profile. We love it and paired it in our celeriac mango and guava salad.

What Does Horseradish Mayo Taste Like?

Horseradish mayonnaise offers a flavourful combination of creamy richness and a pleasant, lingering heat. 

The horseradish adds a distinct and sharp flavour that cuts through the richness of the mayo. The soy sauce adds umami depth, and the citrus helps to cut through the bold tastes.

These are the ingredients you need for horseradish mayonnaise dressing:

  • Mayonnaise: Get the best mayonnaise, preferably whole egg, for ultimate richness and creaminess.
  • Horseradish cream: Continuing the creamy trajectory, I’m using horseradish cream to give the dressing a hint of pungent flavours—just a little kick.
  • Soy sauce: Please don’t use dark soy sauce for this dressing as the flavours are too strong and the consistency won’t be right. You can use light soy sauce or regular soy sauce.
  • Lemon: This citrus adds much-needed acidity to balance out the creaminess of this dressing. Just squeeze some into the dressing. Mind the seeds; you don’t want any of them in the salad.

Variations and Substitutions

Lighter option: If this creamy horseradish mayo is too rich for you, you can swap out half the quantity of the mayo with Greek yoghurt or sour cream. This will also add a little tang to the overall flavour profile.

Some of our favourite Greek yoghurt based dressings include creamy garlic dressing and spiced yoghurt dressing with honey.

Not enough heat: Complementing the horseradish cream, you can add mustard, fresh horseradish or even some wasabi! That will really get the pungency heightened!

Herbs: As always, you can mix in chopped fresh herbs like parsley, chives, or dill for added freshness and flavour.

Lemon zest: Add some lemon zest for a bright, citrusy flavour. Might as well use the entire fruit.

Vinegar: If you’re not a massive citrus fan, swap the lemon juice for white wine vinegar or apple cider vinegar for a different acidity.

Gluten free options: Replace the soy sauce with tamari.

Spices: To add a little twist to the recipe, experiment with spices like paprika, cayenne pepper, or garlic powder.

How To Make This Dressing Perfectly [Expert Tips]

Good quality mayonnaise: As this is the main ingredient in this recipe, it is crucial that a good quality mayonnaise is used. It must be rich and creamy, especially if you’re using this recipe more as a horseradish aioli or a dipping condiment.

For our miso mayo dressing, we used good quality mayonnaise too, to enhance the flavours.

Fresh lemons: Please use fresh lemons and their zest if you wish. No lemon juice out of a bottle.

Light soy sauce: Don’t use dark soy sauce, as it will discolour the homemade horseradish mayo and take on a darker consistency.

Consistency: Aim for a smooth and creamy consistency. Whisk the ingredients together thoroughly to ensure they are well combined.

Chill time: Allow the horseradish mayonnaise to chill in the refrigerator for at least 30 minutes before serving. This will help the flavours meld together and enhance the overall taste.

How to Store

Store any leftover horseradish mayonnaise in an airtight container in the refrigerator for up to a week. Shake or stir before using to recombine any separated ingredients.
