When you combine two flavoursome ingredients such as tahini and miso together, what do you get? One explosive salad dressing that is super delicious.

Miso paste is a staple in Japanese cooking. Made from fermented soya beans, miso paste is full of umami flavour and a super versatile ingredient. Don’t think it’s just for miso soup!

There are lots of mouthwatering ways to use miso paste to uplift the flavour and add depth including vegetables, seafood, tofu and chicken.

Miso paste is salty. No doubt about that. So when you use it in your cooking, you need to balance the savoury flavours well.

In our Tahini Miso Dressing, we harmonise the miso paste with maple syrup, lemon juice and a little extra virgin olive oil. With added tahini, it creates a creamier consistency with another level of nuttiness.

This is a rich, moreish kind of salad dressing that we love and would work well with vegetables like roasted cauliflower, sweet potatoes and eggplant.

And why not try this creamy salad dressing in a fresh shredded coleslaw for a healthier version over a mayonnaise based dressing.

Ingredients

These are the ingredients you need for tahini miso dressing:

Tahini: Love this thick sesame based paste that has been around in the culinary world for the longest time.

Get some hulled tahini such as Baron’s or Soom Foods, as it won’t be as bitter as the unhulled tahini.

White miso paste: This is quite a stock standard Asian grocery item so you should be able to find it in the Asians ection of your regular supermarkets. Hikari is our go to brand.

To use up the miso paste, look up recipes for miso glazed salmon or nasu dengaku, which is miso glazed eggplant. Great for a midweek meal.

Extra virgin olive oil: Nothing beats a good olive oil, so essential for salad dressings.

Maple syrup: Love a good splash of maple syrup to give the recipe some sweet notes. If you have it, get a deep dark maple syrup for a robust taste such as 365 by Whole Foods Market.

Lemon: As always, we use the juice of a lemon to add citrusy notes and to cut through the strong flavours of the miso and tahini. Just a touch of tartness works really well with these ingredients.

Water: Warm water works best to get the tahini and miso pastes to play nice and work well together to combine.

In a small bowl, add tahini, miso paste and warm water and mix well together to combine.

Tahini and miso paste are thicker in consistency so using warm water will help dilute it and create a smoother paste. If you prefer a thinner consistency, adjust with a little more water.

Add extra virgin olive oil, lemon juice and maple syrup. Mix tahini dressing until well combined.
