Made with 4 ingredients following the basic principles of a good vinaigrette, this is a versatile whole grain mustard dressing that can be used on your leafy summer salads, roasted vegetables or sandwiches. 

I adore the combination of robust whole grain mustard with sharp, tangy lemon juice, all beautifully balanced with sweet honey. And when emulsified perfectly with a high-quality olive oil, it creates an absolutely delicious combination

It takes minutes to make, stores well in the refrigerator and unlike most store bought options, this homemade honey mustard dressing contains nothing artificial. There are no more excuses not to make your own salad dressings!

What Is Seeded Mustard?

Seeded mustard, also known as whole grain mustard, grainy mustard or old style mustard, is a type of mustard condiment that is made from whole mustard seeds.

Unlike traditional smooth or creamy mustard like Dijon mustard or hot yellow mustard, seeded mustard is made with intact seeds from the mustard plant, which gives it a distinct grainy texture and appearance. 

The whole grain mustard seeds provide a delightful crunch and textured feel when you eat seeded mustard. This also gives the condiment a more robust and overall pungent flavour, which is why I love adding it to salad dressings for extra oomph, just like our creamy wholegrain mustard dressing in our pear arugula salad.

Seeded mustard is a versatile condiment commonly used as a spread for sandwiches, a topping for grilled steak, a flavour enhancer in salad dressings, and a component of marinades and sauces.

Is Seeded Mustard Dressing Recipe Vegan?

Our seeded mustard dressing recipe is not classified as vegan as we use honey for the sweetener. Substitute honey with maple syrup or rice malt syrup for a vegan mustard dressing.

What Kind Of Honey To Use For Honey Mustard Dressing?

Honey is a natural phenomenon that provides immense joy in the culinary world. We are continuously amazed by the intricate process that our busy bees go through to produce this wonderful ingredient. 

Worker bees visit over 100 flowers to collect nectar, mix it with saliva and store it in their stomachs before returning to the hive to share the nectar, chew and regurgitate from one bee to another.

Bees will spread the nectar over the honeycomb or fan it with their wings to reduce the water content. The honey is then stored in the honeycomb and protected by beeswax until they are ready to consume it.

After all this work, a hive will only produce about 30kg (65 pounds) of surplus honey each year. We are forever grateful we get to enjoy it!

We frequently use pure honey in our dressings for its sweetness and complex flavours influenced by the flowers and plants that bees visit to extract the honey. 

The type of honey you use in dressings depends on your taste preferences and the flavour profile you want to achieve in your salad dressing. 

Opt for a more light-medium strength honey if you prefer more neutral flavours. Honey with richer, deeper caramel tones and thick consistency may not be suitable for dressings. 

In Australia, many of the flavours come from our native plants like Yellow Box, Blue Gum and Leatherwood. Other popular kinds of honey include Clover and Orange Blossom honey.

If you purchase any honey that says “pure honey”, it means that nothing was added to it, and it is as pure as it comes. Add some like we have in this salad dressing, and yum…simply delicious!

  • Olive oil: A good olive oil for salad dressing never goes astray. Extra virgin if you have it.
  • Lemon: The juice of lemon gives us the much needed acidity that vinegar typically provides. For this recipe, I opted for fresh citrus only. No vinegar required.
  • Honey: Get yourself some beautiful pure honey. I love getting honey when I’m out in the country somewhere and it’s their speciality or at farmer’s markets when they are so pure and organic. Always nice to try the different flavours available.

Variations and Substitutions

Substitute for whole grain mustard: If you don’t have seeded mustard available, try spicy brown mustard with a coarser consistency like seeded mustard. Alternatively, switch to Dijon mustard for a comparable flavour. Dijon mustard lacks the visible seeds and crunch but will provide a similar level of heat and acidity.

Lemon alternative: You can substitute lemon juice with apple cider vinegar, red wine vinegar or champagne vinegar.

Other sweeteners: Use maple syrup or rice malt syrup if you need a vegan mustard dressing.

Use a mason jar or small bowl and add all ingredients – olive oil, whole grain mustard, honey and lemon juice.

Mix well to combine.

Add salt and pepper to taste.

How to Make This Dressing Perfectly [Expert Tips]

Use quality ingredients: As it goes with all simple vinaigrettes, use quality oils and condiments. The better quality of the olive oil and whole grain mustard makes a difference to the overall taste.

Store in fridge: You can make the honey mustard dressing in advance. Store in the fridge to keep it fresh.

Make sure to shake before using: To ensure the flavours are well combined; please give the salad dressing a good shake before using.

How to Store

In the refrigerator, you can store honey seeded mustard salad dressing in a mason jar for up to 1 week. 

Give it a good shake each time before using, as the emulsion tends to separate when stored in the refrigerator.
