Cut apple and pear into thin matchsticks. Place apple and pear into a bowl of lightly salted water to stop them from turning brown.
When ready to assemble, remove from water and pat dry with paper towels.
On a dry pan over medium heat, toast whole almonds for a couple of minutes. Then remove from heat and roughly chop.
How to Make Creamy Mustard Dressing
Mix together in a mason jar olive oil, lemon juice, seeded mustard, honey, mayonnaise and salt.
Shake until the dressing is well combined.

Honestly I’m not much of a salad person and this was my first time buying watercress. Due to its nutrients I wanted to give it a try. I usually cook watercress so this fits the bill for my goal of eating it raw. The slight sweetness dressing and pears perfectly balance the bitterness of the greens. The almonds add extra protein and a nice texture. I added a small handful of raisins for tonite…dried cranberries would be a nice flavor kick and shot of color. Great main course salad!
